Ingredients
  

Wet ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract

Dry ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Chocolate chips

  • 1 cup chocolate chips
  • 1/2 cup mint chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla and peppermint extract.

Mixing

  • In another bowl, combine flour, cocoa powder, baking soda, and salt. Gradually add this to the butter mixture, mixing until well combined.
  • Fold in the chocolate chips and mint chocolate chips.

Baking

  • Drop by rounded tablespoons onto ungreased baking sheets.
  • Bake for 10-12 minutes, or until cookies are set but still soft.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For extra soft cookies, refrigerate the dough for 30 minutes before baking. Use parchment paper to line baking sheets for easier clean-up.
