For the crust

  • 36 pieces Oreos, processed in food processor
  • 0.5 cup salted butter, melted

For the cheesecake filling

  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 0.25 cup sour cream
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla
  • 1 pinch salt
  • 3 pieces eggs

For the topping

  • 0.5 cup butter
  • 1 cup chocolate chips

Preparation

  • Preheat oven to 350°F.
  • Line a 9x13 pan with nonstick foil.
  • For the crust, mix the processed Oreos with melted butter.
  • Press the mixture into the bottom of the prepared pan.

Cheesecake Filling

  • Beat softened cream cheese, sugar, and sour cream until smooth.
  • Add peanut butter, vanilla, and salt. Mix well.
  • Add eggs one at a time, mixing until fully incorporated.
  • Pour the filling over the crust in the pan.
  • Bake for about 35-40 minutes, until set.

Topping

  • Meanwhile, melt chocolate chips with butter for the topping.
  • Pour the chocolate over the cooled cheesecake and spread evenly.
  • Chill in the fridge before slicing into bars.

Notes

These bars can be made a day or two in advance. Store them in the fridge once prepared. For serving, consider adding whipped cream or crushed peanuts on top for extra crunch.
