Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened Use room temperature for better mixing.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup creamy peanut butter For more peanut flavor, mix in crunchy peanut butter instead.

Optional

  • chocolate chips Optional, for extra chocolate.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  • In another bowl, beat together the butter, granulated sugar, and brown sugar until creamy.
  • Add the egg and vanilla extract, mixing until combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Gently swirl in the peanut butter.
  • Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper.

Baking

  • Bake for 10-12 minutes until set.
  • Allow to cool before serving.

Notes

For serving, these cookies go well with a glass of milk or topped with ice cream. Store in an airtight container at room temperature for up to a week. Can be frozen for longer storage.
