For the Cookie Dough

  • 1 cup butter, softened Ensure the butter is fully softened for easier mixing.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips Add different types for a fun twist.
  • 1/2 teaspoon peppermint extract Adjust amount for stronger flavor.

For the Frosting

  • 2 cups powdered sugar
  • 2 tablespoons milk

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a separate bowl, combine the flour, cocoa powder, baking soda, and salt. Gradually add this to the creamed mixture.
  • Stir in chocolate chips and peppermint extract.

Baking

  • Drop rounded tablespoons of dough onto ungreased baking sheets.
  • Bake for 9-11 minutes, or until edges are set.
  • Allow to cool completely.

Frosting and Assembly

  • For the frosting, beat together the softened butter, powdered sugar, milk, and peppermint extract until fluffy.
  • Spread frosting on the flat side of one cookie and sandwich with another cookie.

Notes

These cookies can be stored in an airtight container at room temperature or in the fridge for a firmer texture. Optionally freeze and thaw when needed.
