Ingredients
  

For the crust

  • 1 package Oreo cookies, crushed
  • 1/4 cup butter, melted

For the cheesecake layers

  • 1 package cream cheese, softened Make sure it's softened for easy mixing.
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries Fold in gently to avoid breaking.
  • 1 package chocolate instant pudding mix
  • 2 cups milk

For topping

  • to taste Whipped cream Can also pair with vanilla ice cream.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, combine the crushed Oreo cookies and melted butter. Press the mixture into the bottom of a baking dish to form a crust.
  • In another bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth. Fold in the fresh raspberries.
  • Pour the cream cheese mixture over the Oreo crust.
  • In a separate bowl, whisk together the chocolate pudding mix and milk until thickened. Spread the pudding layer over the cream cheese layer.
  • Refrigerate for at least 2 hours or until set.
  • Serve chilled with whipped cream on top.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. For longer storage, freeze cut squares wrapped in plastic wrap.
