Ingredients
  

For the cookies

  • 1 cup unsalted butter, softened Ensure butter is at room temperature
  • 1 cup granulated sugar
  • 1 large egg Can substitute with applesauce or mashed banana
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour Can substitute with gluten-free flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

For the ganache filling

  • 1 cup chocolate ganache Made from 6 oz semisweet chocolate and 1/2 cup heavy cream

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter and sugar until smooth.
  • Beat in the egg and vanilla until well combined.
  • In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  • Gradually mix the dry ingredients into the wet until a dough forms.
  • Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
  • Make an indentation in the center of each ball using your thumb.

Baking

  • Bake for 10-12 minutes.
  • Remove from the oven and let cool slightly.
  • Fill each thumbprint with chocolate ganache.
  • Allow to set before serving.

Notes

These cookies are delightful on their own but can be served with warm milk or coffee. Store in an airtight container at room temperature for up to a week, or freeze for longer storage.
