Ingredients
  

  • 6 ounces Mexican-style chorizo
  • 16 ounces Velveeta cheese
  • 5 ounces pepper jack cheese
  • 12 ounces evaporated milk
  • 2 cloves garlic minced
  • 1 cup mozzarella cheese optional
  • 1 cup queso quesadilla cheese optional
  • 1 cup diced tomatoes Rotel
  • Jalapeños optional, for extra spice

Instructions
 

  • Heat a large skillet over medium heat.
  • Cook the chorizo for 5-7 minutes, breaking it into small crumbles.
  • Drain any excess fat from the chorizo.
  • Add minced garlic and cook for an additional minute.
  • Reduce heat to low and gradually add cheese, stirring constantly to melt smoothly.
  • Stir in diced tomatoes and jalapeños (if desired).
  • Once cheese is fully melted and the dip is smooth, remove from heat and serve.

Notes

If you prefer a creamier dip, you can add more evaporated milk.
To customize the spice level, adjust the amount of jalapeños or add a sprinkle of smoked paprika for extra flavor.
This dip pairs well with tortilla chips, roasted potatoes, and fresh veggies.
