Ingredients
  

  • 4 cups Green Tomatoes finely chopped
  • 2 cups Bell Peppers chopped
  • 4 cups Green Cabbage finely chopped
  • 1 cup Onion chopped
  • 2 tablespoons Kosher Salt
  • 1 cup White Vinegar
  • 1/4 cup Granulated Sugar
  • 1 tablespoon Mustard Powder
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Crushed Red Pepper Flakes
  • 1 teaspoon Celery Seeds
  • 1/4 teaspoon Ground Turmeric

Instructions
 

Prepare Vegetables:

  • Finely chop the green tomatoes, cabbage, onions, and bell peppers using a food processor or grinder.
  • Combine in a large mixing bowl, sprinkle with kosher salt, and toss to coat. Cover and refrigerate for at least 4 hours or overnight to remove excess moisture.

Rinse and Drain:

  • Rinse the vegetables thoroughly and drain well using a colander.

Prepare the Brine:

  • In a saucepan, combine white vinegar, sugar, mustard powder, mustard seeds, crushed red pepper flakes, celery seeds, and turmeric. Heat and stir until sugar dissolves.

Cook the Relish:

  • Add the rinsed and drained vegetables to the saucepan with the brine. Simmer for 10 minutes, stirring occasionally, until tender but still crisp.

Jar the Relish:

  • Use a slotted spoon to pack the hot chow chow into sterilized jars, leaving 1/2 inch headspace. Pour brine over the vegetables to cover.

Seal and Process:

  • Wipe jar rims clean, seal with lids and rings, and process in a boiling water bath for 10 minutes. Let jars cool completely.

Store:

  • Check for proper seals and store in a cool, dark place. Refrigerate after opening.
