- 4 cups Green Tomatoes finely chopped
- 2 cups Bell Peppers chopped
- 4 cups Green Cabbage finely chopped
- 1 cup Onion chopped
- 2 tablespoons Kosher Salt
- 1 cup White Vinegar
- 1/4 cup Granulated Sugar
- 1 tablespoon Mustard Powder
- 1 teaspoon Mustard Seeds
- 1 teaspoon Crushed Red Pepper Flakes
- 1 teaspoon Celery Seeds
- 1/4 teaspoon Ground Turmeric
Prepare Vegetables:
Finely chop the green tomatoes, cabbage, onions, and bell peppers using a food processor or grinder.
Combine in a large mixing bowl, sprinkle with kosher salt, and toss to coat. Cover and refrigerate for at least 4 hours or overnight to remove excess moisture.
Prepare the Brine:
In a saucepan, combine white vinegar, sugar, mustard powder, mustard seeds, crushed red pepper flakes, celery seeds, and turmeric. Heat and stir until sugar dissolves.
