Ingredients
  

Shrimp and Marinade

  • 1 pound shrimp Peeled and deveined
  • 2 tablespoons lime juice Freshly squeezed
  • 1 tablespoon olive oil Extra virgin preferred
  • 2 cloves garlic Minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 cup cilantro Chopped

Serving Components

  • 2 cups rice or quinoa Optional base
  • 1 cup bell peppers Sliced, for topping
  • 1 avocado sliced For topping
  • 1 cup corn For topping

Instructions
 

Marinating Shrimp

  • In a bowl, mix shrimp with lime juice, minced garlic, chopped cilantro, olive oil, salt, and pepper.
  • Marinate the shrimp for about 15-20 minutes.

Cooking Shrimp

  • Cook shrimp in a skillet over medium heat until they turn pink, about 3-4 minutes per side.

Serving

  • Serve over rice or quinoa, topped with fresh vegetables like bell peppers, avocado, and corn.
  • Garnish with additional cilantro and lime wedges if desired.

Notes

To keep leftovers fresh, store them in an airtight container in the fridge for up to 3 days. If freezing, separate shrimp and vegetables into individual containers. Reheat easily in the microwave or on the stovetop until heated through. For added flavor, consider adjusting lime and garlic to taste.
