Ingredients
  

For the marinade

  • 1 tablespoon olive oil Extra virgin olive oil preferred.
  • 1 cup lime juice Freshly squeezed for the best flavor.
  • 2 cloves garlic, minced Add more for extra flavor if desired.
  • Salt and pepper to taste Adjust according to preference.

Main ingredients

  • 1 lb flank steak Can substitute with chicken or pork.
  • 2 cups cooked rice Pre-cooked rice can speed up preparation.
  • 1/4 cup fresh cilantro, chopped Can use other herbs for variation.

Optional toppings

  • diced tomatoes For added freshness.
  • avocado, sliced Creamy texture complements the dish.
  • black beans For extra protein.

Instructions
 

Preparation

  • In a bowl, combine olive oil, lime juice, minced garlic, salt, and pepper to make a marinade.
  • Place the flank steak in a resealable bag and pour the marinade over it. Seal the bag and marinate for at least 30 minutes (or up to overnight).

Cooking

  • Preheat a grill or skillet over medium-high heat.
  • Remove the steak from the marinade and grill for about 5-7 minutes on each side, or until desired doneness.
  • Let the steak rest for a few minutes before slicing it thinly against the grain.

Assembly

  • To assemble the bowls, divide the cooked rice into bowls, top with sliced steak, and sprinkle with fresh cilantro.
  • Add any optional toppings as desired and serve.

Notes

It's important to slice the steak against the grain for tenderness. Marinating for longer enhances flavor. Can substitute rice with quinoa or cauliflower rice for low-carb options.
