Preparation

  • Preheat the oven to 350°F (175°C) and grease a loaf pan.
  • In a blender, combine the cottage cheese, eggs, oats, honey (or maple syrup), vanilla, baking powder, cinnamon, and salt; blend until smooth.
  • Pour the batter into the prepared loaf pan.

Baking

  • Bake for 40-50 minutes, or until a toothpick comes out clean.
