Ingredients
  

Pasta:

  • 9 lasagna noodles unbroken
  • Fresh or oven-ready pasta sheets

Meat Sauce:

  • 1 lb ground beef
  • 1/2 lb Italian sausage optional
  • 1 small onion diced
  • 3 cloves garlic minced
  • 28 oz tomato puree
  • 15 oz tomato sauce
  • 6 oz tomato paste
  • 14.5 oz diced tomatoes
  • 1 tbsp sugar
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • 1.5 tsp kosher salt
  • 2 bay leaves

Cheese Filling:

  • 32 oz ricotta cheese
  • 16 oz mozzarella cheese shredded
  • 4 oz parmesan cheese grated
  • 1 large egg
  • 2 tbsp fresh parsley chopped
  • Salt and black pepper to taste

Instructions
 

Prepare the Meat Sauce:

  • Heat a large skillet over medium-high heat.
  • Brown the ground beef and Italian sausage until no pink remains.
  • Drain excess fat.
  • Add diced onions and garlic, cook until softened.
  • Stir in tomato puree, tomato sauce, tomato paste, and diced tomatoes.
  • Season with sugar, basil, oregano, salt, and bay leaves.
  • Simmer for 45 minutes, stirring occasionally.

Prepare the Cheese Filling:

  • In a mixing bowl, combine ricotta, mozzarella, parmesan, egg, parsley, salt, and black pepper.
  • Mix until smooth and well combined.

Cook the Noodles:

  • Bring a large pot of salted water to a boil.
  • Cook lasagna noodles until al dente (8-10 minutes).
  • Drain and rinse with cold water.

Assemble the Lasagna:

  • Preheat oven to 350°F (175°C).
  • Spread a thin layer of meat sauce on the bottom of a 9x13 inch baking dish.
  • Place a layer of lasagna noodles on top.
  • Add a layer of cheese mixture and meat sauce.
  • Repeat layers until all ingredients are used, finishing with sauce and mozzarella cheese.

Bake the Lasagna:

  • Cover with aluminum foil and bake for 45 minutes.
  • Remove foil and bake uncovered for an additional 15-20 minutes, until golden brown.

Rest & Serve:

  • Let the lasagna rest for 15 minutes before slicing.
  • Serve hot and enjoy!

Use freshly grated cheese for best results.
