  • 1 cup shredded coconut
  • 1/2 cup all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1/2 cup milk Dairy-free milk can be used as a substitute.
  • 2 tablespoons sugar Adjust according to taste.
  • 1 teaspoon vanilla extract
  • Butter as needed for frying

Preparation

  • Gather all necessary ingredients: thick-cut bread, shredded coconut, all-purpose flour, ground cinnamon, salt, eggs, milk, sugar, vanilla extract, butter, and maple syrup.
  • Slice the loaf of thick-cut bread into 1-inch thick slices.
  • In a shallow dish, combine shredded coconut, all-purpose flour, ground cinnamon, and salt. Mix well.
  • In a separate bowl, whisk together eggs, milk, sugar, and vanilla extract until smooth.

Cooking

  • Heat a large skillet over medium heat and melt butter to coat the surface.
  • Dip each slice of bread into the egg mixture, coating both sides, and let excess drip off.
  • Press the coated bread into the coconut mixture to adhere.
  • Place the coated bread onto the skillet and cook for 3-4 minutes on each side until golden brown.
  • Transfer cooked French toast to a plate and repeat with remaining slices, adding butter as needed.
  • Drizzle with maple syrup before serving.

Notes

Top with fresh berries, banana slices, or a sprinkle of powdered sugar. Store leftovers in an airtight container for up to three days. Reheat in a toaster or microwave.
