- 4 turkey legs bone-in, skin-on, ~12 ounces each
- 2 tbsp olive oil or melted butter
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried sage
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper optional
Preheat your oven to 425°F (218°C).
Pat the turkey legs dry with paper towels to remove excess moisture.
In a small bowl, mix smoked paprika, garlic powder, thyme, rosemary, sage, salt, black pepper, and optional cayenne pepper.
Brush the turkey legs with olive oil or melted butter.
Sprinkle the seasoning blend evenly over all sides of the turkey legs.
Place the turkey legs on a roasting rack in a pan, leaving space between them.
Roast for 45-50 minutes, or until the internal temperature reaches 175-180°F (79-82°C). Cover with foil if the skin browns too quickly.
Remove from the oven and let rest for 10 minutes before serving.
