Ingredients
  

  • 4 turkey legs bone-in, skin-on, ~12 ounces each
  • 2 tbsp olive oil or melted butter
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried sage
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper optional

Instructions
 

  • Preheat your oven to 425°F (218°C).
  • Pat the turkey legs dry with paper towels to remove excess moisture.
  • In a small bowl, mix smoked paprika, garlic powder, thyme, rosemary, sage, salt, black pepper, and optional cayenne pepper.
  • Brush the turkey legs with olive oil or melted butter.
  • Sprinkle the seasoning blend evenly over all sides of the turkey legs.
  • Place the turkey legs on a roasting rack in a pan, leaving space between them.
  • Roast for 45-50 minutes, or until the internal temperature reaches 175-180°F (79-82°C). Cover with foil if the skin browns too quickly.
  • Remove from the oven and let rest for 10 minutes before serving.
