Ingredients
  

For the Poppers

  • 1 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1/4 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 2 tbsp honey
  • 1 large egg
  • 1/2 cup corn kernels Fresh or canned

For the Honey Butter Glaze

  • 1/4 cup melted butter
  • 2 tbsp honey

Instructions
 

Preparation

  • Preheat oven to 375°F and grease a mini muffin tin.
  • In one bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
  • In another bowl, combine the milk, melted butter, honey, and egg.
  • Pour the wet ingredients into the dry ingredients, and then gently fold in the corn kernels.
  • Fill the muffin cups about 3/4 full with the mixture.

Baking

  • Bake for 12-15 minutes until golden brown.
  • For the glaze, mix melted butter and honey, then brush it over the warm poppers.

Notes

These poppers can be enjoyed as a side dish with chili or soup. Store leftovers in an airtight container for up to three days or freeze individually for later use. Avoid overmixing the batter for best results.
