Remember those little cosmic brownies in your lunchbox? Now, you can make them at home with real ingredients, a fudgy brownie base, silky ganache topping, and colorful sprinkles. These homemade cosmic brownies are fresher and more delicious than store-bought versions!

Ingredients
  

For The Fudgy Brownie Base:

  • 1 cup 2 sticks butter (unsalted or salted)
  • 2 cups granulated sugar
  • 4 large eggs room temperature
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup dark cocoa powder
  • 1/2 teaspoon salt skip if using salted butter
  • 1/4 teaspoon espresso powder optional

For The Ganache Topping:

  • 1 1/2 cups chocolate chips semisweet or milk chocolate
  • 1/2 cup heavy cream
  • 1 tablespoon corn syrup
  • Rainbow chip sprinkles

Instructions
 

  • Preheat oven to 350°F and line a 9x13 pan with parchment paper, leaving overhang for easy removal.
  • Melt butter completely using the microwave or stovetop. Let it cool slightly.
  • Mix wet ingredients: Stir sugar into melted butter. Add eggs one at a time, mixing well. Stir in vanilla.
  • Add dry ingredients: Fold in flour, cocoa powder, salt, and espresso powder (if using). Mix until just combined.
  • Bake: Spread batter in the prepared pan and bake for 25-28 minutes. The edges should be set, and the center slightly underdone.
  • Cool completely before adding ganache (at least 1 hour).
  • Prepare ganache: Heat heavy cream until simmering, then pour over chocolate chips. Let sit for 2 minutes, then stir until smooth. Mix in corn syrup.
  • Assemble: Pour ganache over cooled brownies and spread evenly. Immediately sprinkle with rainbow chips and press slightly to stick.
  • Let set for 1-2 hours at room temp or 30 minutes in the fridge.
  • Slice and enjoy! For clean cuts, chill for 30 minutes before slicing with a sharp knife. Store leftovers in an airtight container for up to 5 days.

Notes

For a gluten-free version, use a 1:1 gluten-free flour blend.
For a dairy-free option, substitute butter with plant-based butter and heavy cream with coconut cream.
To freeze, wrap individual brownies in plastic wrap and store in an airtight container for up to 3 months.
