  • 1 cup marinara sauce
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning

  • 1 tablespoon olive oil for cooking
  • Fresh basil for garnish optional

Preparation

  • Preheat your oven to 375°F (190°C).
  • Season both sides of the chicken breasts with salt, pepper, and Italian seasoning.
  • Heat a tablespoon of olive oil in a skillet over medium heat.
  • Add the chicken breasts and cook for 5-7 minutes per side until golden and cooked through.

Assembly and Baking

  • In a baking dish, layer the marinara sauce on the bottom.
  • Place the chicken on top, then spread cottage cheese over each breast.
  • Top with mozzarella and Parmesan cheese.
  • Bake in the preheated oven for 20 minutes or until the cheese is melting and bubbly.

Notes

To keep leftovers fresh, let cool completely and store in an airtight container for up to 3 days. Freeze portions for up to 3 months. For best results, reheat baked at 350°F (175°C) until warmed through.
