Instructions
Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish with butter or non-stick spray.
In a large mixing bowl, whisk the 8 eggs until well beaten and uniform in color.
Stir in the cottage cheese, melted butter, flour, baking powder, salt, and pepper until the flour is fully incorporated.
Fold in the shredded Monterey Jack cheese and the sliced green onions.
Pour the mixture into the prepared baking dish and spread evenly to the edges.
Bake for 35 to 40 minutes, or until the top is golden brown and the center is set and no longer jiggles.
Allow the bake to rest for 5 to 10 minutes at room temperature to firm up before slicing into squares.
