Ingredients
  

  • 8 large egg s
  • 2 cups small -curd cottage cheese
  • 1/2 cup all -purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 cups shredded Monterey Jack cheese
  • 1/4 cup unsalted butter, melted
  • 1/4 cup sliced green onions

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish with butter or non-stick spray.
  • In a large mixing bowl, whisk the 8 eggs until well beaten and uniform in color.
  • Stir in the cottage cheese, melted butter, flour, baking powder, salt, and pepper until the flour is fully incorporated.
  • Fold in the shredded Monterey Jack cheese and the sliced green onions.
  • Pour the mixture into the prepared baking dish and spread evenly to the edges.
  • Bake for 35 to 40 minutes, or until the top is golden brown and the center is set and no longer jiggles.
  • Allow the bake to rest for 5 to 10 minutes at room temperature to firm up before slicing into squares.
