Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, whisk together the cottage cheese and eggs until well combined.
  • Stir in the chopped bacon and any optional vegetables.
  • Season with salt and pepper to taste.
  • Grease a muffin tin and pour the mixture evenly into each muffin cup, filling them about 3/4 full.
  • Bake for 20-25 minutes or until the egg bites are set and lightly golden on top.
  • Allow to cool slightly before removing from the muffin tin.

Notes

These bites are versatile and can be served warm with fresh fruit or paired with salsa/hot sauce. Store in an airtight container in the fridge for up to 4 days or freeze for up to a month.
