  • 2 slices Whole grain bread Can use any variety of bread.
  • 1 cup Cottage cheese Blend for a creamier texture if desired.
  • 2 large Eggs Soft-boiled for best results.
  • to taste Sriracha sauce Adjust based on spice preference.
  • to taste Salt and pepper For seasoning.

Preparation

  • Toast the whole grain bread to your liking.
  • Soft-boil the eggs by cooking them in boiling water for about 6-7 minutes, then place them in cold water to stop cooking.
  • Spread cottage cheese over the toasted bread.
  • Peel the soft-boiled eggs and slice them, placing them on top of the cottage cheese.
  • Drizzle Sriracha sauce over the top, and season with salt and pepper to taste. Serve immediately.

Notes

To keep the ingredients separate when storing leftovers, store the cottage cheese and sliced eggs in an airtight container. Best consumed within 1-2 days for optimal taste. The toast should be freshly made each time.
