Flatbread Ingredients

  • 1 cup cottage cheese Make sure it's well-drained for best texture.
  • 1 cup all-purpose flour (or whole wheat flour) Use whole wheat for a heartier version.
  • 1 large egg Can be substituted with flaxseed or chia meal for a vegan option.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil Optional; used for cooking.
  • as needed water Water Add to reach desired dough consistency.

Preparation

  • In a mixing bowl, combine cottage cheese, flour, egg, baking powder, and salt. Mix until a dough forms.
  • If the dough is too dry, add water a little at a time until the right consistency is reached.
  • Divide the dough into small balls and flatten them into circles.

Cooking

  • In a skillet over medium heat, add olive oil (if using) and cook each flatbread for about 2-3 minutes on each side or until golden brown.
  • Serve warm with your favorite dips, wraps, or sandwiches.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For freezing, place parchment paper between flatbreads and store in a freezer-safe bag for up to a month.
