  • 4 pieces chicken breasts Boneless and skinless
  • 1 cup fresh cranberries Can substitute with frozen cranberries if fresh are unavailable
  • 1/2 cup orange juice Freshly squeezed recommended for better flavor
  • 1/4 cup honey Can be substituted with maple syrup
  • 1 tablespoon soy sauce Adds depth to the glaze
  • 1 tablespoon olive oil For searing the chicken
  • to taste Salt and pepper For seasoning
  • for garnish Chopped fresh parsley Optional, for serving

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a saucepan over medium heat, combine cranberries, orange juice, honey, and soy sauce. Bring to a simmer until cranberries burst and sauce thickens slightly.
  • Season chicken breasts with salt and pepper.

Cooking

  • In a skillet, heat olive oil over medium-high heat and sear the chicken breasts until golden brown, about 3-4 minutes on each side.
  • Transfer the chicken to a baking dish and pour the cranberry-orange glaze over the top.
  • Bake in the preheated oven for 25-30 minutes, or until chicken is cooked through.

Serving

  • Garnish with chopped parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For freezing, place cooled chicken and glaze in a freezer-safe bag for up to 3 months. Thaw overnight in the fridge and reheat before serving.
