Dry Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup fresh or dried cranberries
  • Zest of 1 orange
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract

Glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons orange juice

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • Cut in the cold butter until the mixture resembles coarse crumbs.
  • Stir in the cranberries and orange zest.
  • In a separate bowl, mix heavy cream, egg, and vanilla.
  • Add the wet ingredients to the dry ingredients, stirring until just combined.
  • Turn the dough onto a floured surface and gently knead a few times. Pat it into a circle about 1 inch thick.
  • Cut into wedges or use a biscuit cutter to create scones.

Baking

  • Place them on the baking sheet and bake for 15-20 minutes or until golden.
  • For the glaze, mix powdered sugar with orange juice until smooth. Drizzle over cooled scones.

Notes

These scones are best enjoyed warm and can be served with tea or coffee. To store, keep them in an airtight container for up to 3 days, or freeze for a month. Reheat in the oven or microwave.
