  • 1 lb shrimp (peeled and deveined)
  • 2 tablespoons Cajun seasoning
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup bell peppers (sliced)
  • 1/2 cup Parmesan cheese (grated) For a garnish
  • Salt and pepper to taste
  • Chopped parsley for garnish

Preparation

  • Cook pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add garlic and bell peppers; sauté until soft.
  • Add shrimp and Cajun seasoning, cooking until shrimp is pink.
  • Pour in chicken broth and heavy cream; bring to a simmer.
  • Stir in cooked pasta and Parmesan cheese, mixing until well combined.
  • Season with salt and pepper.
  • Garnish with parsley before serving.

Notes

Cook the pasta just a tad under al dente, as it will continue to cook when mixed with the sauce. For variations, consider adding spinach or cherry tomatoes, reducing Cajun seasoning for a kid-friendly option, or substituting shrimp with chicken or sausage.
