Ingredients
  

  • 1 bunch fresh cilantro about 2 cups packed
  • 4 –5 garlic cloves fresh
  • 1 cup sour cream or Greek yogurt
  • 2 tbsp lime juice fresh preferred
  • 1 jalapeño seeds removed (optional for less heat)
  • 2 tbsp olive oil
  • Salt to taste
  • Optional: Water to thin the sauce if needed

Instructions
 

  • Prep ingredients: Rough chop cilantro (stems are okay), peel garlic, halve jalapeño and remove seeds for less heat.
  • Add to blender: Combine cilantro, garlic, sour cream or yogurt, lime juice, jalapeño, olive oil, and salt.
  • Blend: Pulse to start, then blend on high for 30–45 seconds until smooth. Add a tablespoon of water at a time if needed to thin.
  • Taste and adjust: Add more salt, garlic, or lime as needed.
  • Chill: Refrigerate for 30 minutes before serving to allow flavors to develop.

Notes

Keeps fresh in the fridge for 5–7 days.
Can be frozen in ice cube trays and stored in freezer bags.
For a thicker dip, reduce lime juice and add a bit of avocado or use full-fat sour cream.
Try variations like adding avocado, roasted garlic, or switching to coconut cream for a vegan version.
