Creamy Cottage Cheese Herb Dip

Ingredients
  

  • 2 cups cottage cheese (4% milkfat)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic , minced
  • 2 tablespoons fresh chives, finely chopped
  • 1 tablespoon fresh dill, finely chopped
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon freshly ground black pepper

Instructions
 

  • Place the cottage cheese, lemon juice, olive oil, and minced garlic into a food processor or high-speed blender.
  • Process the mixture on high speed for approximately 45 to 60 seconds until the texture is completely smooth and aerated.
  • Transfer the blended base into a chilled mixing bowl.
  • Fold in the finely chopped chives and dill using a silicone spatula until evenly distributed.
  • Season the dip with sea salt and black pepper to taste.
  • Cover and refrigerate for 30 minutes prior to service to allow the herb aromatics to infuse the base.
  • Serve chilled with vegetable crudites or whole-grain crackers.
