  • 1 lb boneless, skinless chicken breasts About 3-4 breasts
  • 16 oz fresh or frozen gnocchi
  • 8 oz cream cheese
  • 2 cups low-sodium chicken broth
  • 4 cups fresh spinach Use fresh for best flavor
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste Salt and pepper

Preparation

  • Chop the chicken into bite-sized pieces.
  • Heat oil in a large skillet over medium-high heat. Add chicken and cook until golden brown, about 5-7 minutes.
  • Lower the heat, add cream cheese and chicken broth, then stir until smooth.

Cooking

  • Toss in the gnocchi and spinach; cover and simmer for about 5-7 minutes until gnocchi are tender.
  • Stir in shredded cheddar cheese until melted.
  • Serve hot, garnished with extra cheese if desired.

Notes

To store, keep leftovers in an airtight container in the fridge for 3-4 days. For freezing, use freezer-safe containers for up to 2-3 months. Reheat with a splash of broth for creaminess. Consider using Greek yogurt instead of cream cheese for a lighter version.
