  • 8 oz whole wheat pasta Use whole wheat for added nutrition.

Chicken Ingredients

  • 1 lb lean chicken breast, diced Cut into small, even pieces for uniform cooking.
  • 3 clove garlic, minced Sauté until fragrant.
  • 2 tbsp olive oil For sautéing chicken.
  • 1 cup Greek yogurt Can be substituted with sour cream or cream cheese.
  • 1 cup grated Parmesan cheese Add more for serving if desired.
  • Salt and pepper to taste
  • Chopped parsley for garnish Optional, for serving.

Instructions
 

Preparation

  • Cook the whole wheat pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  • Add diced chicken breast, season with salt and pepper, and cook until browned and cooked through.

Combining

  • Reduce heat to low, then stir in Greek yogurt and Parmesan cheese until well combined and creamy.
  • Add the cooked pasta to the skillet and toss to coat everything evenly.

Serving

  • Serve garnished with chopped parsley and additional Parmesan if desired.

Notes

To store leftovers, place them in an airtight container in the fridge for up to 3 days. It can also be frozen for up to 2 months. Reheat gently in the microwave or on the stovetop, adding a splash of milk or broth to loosen the sauce as needed. For additional flavor, consider adding Italian seasoning or red pepper flakes.
