Preparation

  • Cook the gnocchi according to the package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
  • Add the spinach and cook until wilted.
  • Pour in the heavy cream and bring to a simmer.
  • Stir in the feta cheese until melted and combined.
  • Add the cooked gnocchi to the skillet and toss to coat in the sauce.
  • Season with salt and pepper to taste.
  • Serve warm, topped with grated Parmesan cheese if desired.

Notes

This creamy gnocchi pairs wonderfully with a simple side salad or crusty bread. For a vegan version, use cashew cream and tofu feta. You can also add other veggies or proteins for extra flavor and nutrition.
