Instructions
Preheat oven to 375°F (190°C).
Arrange baguette slices on a baking sheet and brush lightly with extra virgin olive oil.
Bake for 5 to 7 minutes or until the edges are golden brown and crisp.
In a small mixing bowl, whisk the ricotta cheese with lemon zest and sea salt until light and aerated.
Spread approximately 1 tablespoon of the whipped ricotta onto each toasted baguette slice.
Top each slice with a generous sprinkle of chopped pistachios.
Finish by drizzling honey over the bites and serve immediately.
