Creamy Ricotta Pistachio Honey Bites

Ingredients
  

  • 1 cup whole milk ricotta cheese
  • 1/2 cup shelled pistachios, finely chopped
  • 3 tablespoons hone y
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon sea salt
  • 1 French baguette , sliced into 1/2 inch rounds
  • 2 tablespoons extra virgin olive oil

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Arrange baguette slices on a baking sheet and brush lightly with extra virgin olive oil.
  • Bake for 5 to 7 minutes or until the edges are golden brown and crisp.
  • In a small mixing bowl, whisk the ricotta cheese with lemon zest and sea salt until light and aerated.
  • Spread approximately 1 tablespoon of the whipped ricotta onto each toasted baguette slice.
  • Top each slice with a generous sprinkle of chopped pistachios.
  • Finish by drizzling honey over the bites and serve immediately.
