- 1 lb large shrimp peeled and deveined
- 2 tbsp butter
- 4 cloves garlic minced
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes chopped
- 2 cups fresh spinach
- 1/2 cup parmesan cheese grated
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes optional
- 1 tbsp olive oil
Heat olive oil and butter in a large skillet over medium heat.
Add shrimp, season with salt and pepper, and cook for 2-3 minutes per side until pink and opaque. Remove and set aside.
In the same skillet, sauté garlic for 30 seconds until fragrant.
Add sun-dried tomatoes and cook for 1 minute.
Pour in heavy cream, stirring continuously. Let it simmer for 2-3 minutes.
Stir in spinach and parmesan cheese until combined and the spinach wilts.
Return shrimp to the skillet and mix well. Cook for another 2 minutes.
Adjust seasoning if needed and serve immediately.
Use wild-caught shrimp for the best flavor.
For a keto version, replace sun-dried tomatoes with roasted red peppers.
