Ingredients
  

  • 1 lb Italian sausage mild or spicy
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 large russet potatoes diced
  • 4 cups chicken broth
  • 2 cups kale chopped
  • 1 cup heavy cream
  • Salt to taste
  • Black pepper to taste
  • Red pepper flakes optional

Instructions
 

  • In a large Dutch oven, brown the Italian sausage over medium heat. Break into small crumbles and cook until browned. Drain excess fat.
  • Add diced onions and minced garlic to the pot, sauté until onions are translucent.
  • Add diced potatoes and chicken broth. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes, until potatoes are tender.
  • Stir in the chopped kale and cook for 3-5 minutes until kale is tender.
  • Slowly add the heavy cream and stir to combine. Adjust seasoning with salt, pepper, and red pepper flakes.
  • Serve hot, enjoy!

Notes

For a lighter version, substitute half-and-half or coconut milk for the heavy cream.
For a spicier soup, add more red pepper flakes to taste.
Can be made dairy-free with coconut cream.
