Equipment

  • Cast-iron skillet or flat-top griddle
  • Heavy-duty metal spatula
  • Burger press or flat metal tool
  • Parchment paper
  • High-heat resistant grilling gloves
  • Instant-read meat thermometer

Ingredients

  • 500 g ground beef (80/20 fat ratio) or ground chicken
  • 4 brioche or potato buns lightly toasted
  • 1 tbsp garlic powder
  • 1/2 cup mayonnaise
  • 1/4 cup BBQ sauce
  • 4 tbsp secret sauce mayonnaise, BBQ sauce, spices
  • 1 tbsp Worcestershire sauce
  • 1 tbsp dill pickle juice
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • Optional: 1 tsp honey
  • Toppings: Lettuce tomato, dill pickles, red onions, crispy bacon (or gourmet options like truffle mushrooms, caramelized onions)

Instructions

  • Preheat your griddle or cast-iron skillet to 450°F and coat with canola oil.
  • Form meat into 2-3 ounce balls.
  • Place the meat ball on the hot surface and use a burger press or spatula to smash the patty to ¼-inch thickness.
  • Cook the patties for 2-4 minutes on each side until crispy and browned. Add a slice of cheese during the final minute of cooking.
  • Toast the buns lightly.
  • Assemble the burgers: layer the secret sauce on the bottom bun, add the crispy patty, and top with your choice of toppings.
  • Crown with the top bun and serve hot.

Notes

Use fresh ground beef with a 20% fat ratio for the best flavor and crispiness.
Be sure to preheat the cooking surface to get that crispy, caramelized edge.
You can refrigerate leftovers for up to 3-4 days or freeze cooked patties for up to 3 months.
