  • 4 pieces boneless, skinless chicken breasts (about 6 oz each) Ensure chicken is of even thickness.
  • 1/2 cup all-purpose flour
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs (beaten)
  • 1 cup panko breadcrumbs
  • 1/4 cup olive oil For frying.
  • 6 oz feta cheese (crumbled)
  • 2 tablespoons hot honey
  • 1 tablespoon fresh parsley (chopped, for garnish)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Pat the chicken breasts completely dry with paper towels.
  • Set up three shallow dishes for breading: one for the seasoned flour mixture, one for beaten eggs, and one for panko breadcrumbs.

Breading Chicken

  • In the first dish, mix together flour, paprika, garlic powder, salt, and pepper. Dredge each chicken breast in the flour mixture, then dip in beaten eggs, and finally press into panko breadcrumbs.

Cooking

  • Heat olive oil in a large oven-safe skillet over medium-high heat. Once shimmering, add the chicken breasts and cook for 3-4 minutes per side until golden brown.
  • Sprinkle crumbled feta cheese over the chicken breasts and transfer the skillet to the preheated oven. Bake for 15-20 minutes until chicken reaches 165°F.

Finishing Touch

  • Drizzle hot honey over the chicken and garnish with freshly chopped parsley. Let rest for 2-3 minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months. Use fresh chicken for best flavor.
