Ingredients
  

  • 2 medium sweet potatoes, peeled and cubed into 1/2-inch pieces
  • 2 cans (15 oz each) black beans, rinsed and drained
  • 1 can (28 oz) crushed tomatoes
  • 1 large yellow onion, diced
  • 1 large red bell pepper, diced
  • 3 cloves garlic , minced
  • 2 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon sal t
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon lime juice

Instructions
 

  • Add potatoes, beans, onion, pepper, and garlic to the slow cooker.
  • Whisk tomatoes, broth, and spices together in a separate bowl.
  • Pour the spice mixture over the vegetables and stir well.
  • Cook on low for 8 hours until potatoes are tender.
  • Stir in the fresh lime juice just before you serve.
  • Garnish your bowls with cilantro, avocado, or sour cream.
