Ingredients
  

Main ingredients

  • 8 oz pasta (your choice)
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional) Can be swapped for dairy-free cheese

Dressing

  • 3 tbsp olive oil
  • 2 tbsp lemon juice Adjust to taste
  • Salt and pepper to taste

Instructions
 

Preparation

  • Cook the pasta according to package instructions. Drain and let cool.
  • In a large bowl, combine the diced cucumber, cherry tomatoes, red onion, parsley, and feta cheese.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  • Add the cooled pasta to the vegetable mixture and drizzle the dressing on top.
  • Toss everything together until well combined.
  • Serve chilled or at room temperature.

Notes

Store leftovers in an airtight container in the fridge for about three days. Best not to freeze as the texture of the veggies may change. Make sure the pasta is cool before adding to the salad.
