Ingredients
  

  • 16 ounces medium pasta shells
  • 2 cups chopped dill pickles whole pickles recommended
  • 1 cup diced onion
  • 8 ounces Monterey Jack cheese cubed
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 2/3 cup pickle juice divided
  • 1 tablespoon dried dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: garlic dill pickles or spicy dill pickles for extra flavor

Instructions
 

  • Cook the pasta in a large pot of salted water for 7-9 minutes until al dente. Drain and rinse with cold water.
  • While the pasta cools, chop the dill pickles, onion, and cheese.
  • In a bowl, whisk together mayonnaise, sour cream, 2/3 cup of pickle juice, dill, salt, pepper, and any additional spices you prefer.
  • Combine the cooled pasta with the chopped ingredients and pour the dressing over it. Stir to coat evenly.
  • Refrigerate the salad for 4-6 hours to allow the flavors to blend.
  • Serve chilled and enjoy!

Notes

For extra flavor, let the salad chill for at least 30 minutes before serving to allow the flavors to meld together.
You can substitute the Monterey Jack cheese with sharp cheddar or feta for a different twist.
Add veggies like cherry tomatoes or cucumbers for extra crunch and freshness.
Can be made 1-2 days ahead of time and stored in the refrigerator.
