Ingredients
  

  • 100 g kataifi pastry
  • 100 g pistachio paste
  • 2 tablespoons tahini
  • 100 g white chocolate for pistachio cream
  • 200 g dark or milk chocolate for coating
  • 1 tablespoon coconut oil
  • Pinch of sea salt optional
  • Sweetener like powdered sugar or honey, 1-2 tablespoons

Instructions
 

  • Make the Pistachio Cream: Blend pistachios into a thick paste. Add tahini and mix until smooth. Melt white chocolate and stir into the paste until creamy.
  • Toast the Kataifi: Preheat the oven to 350°F (175°C). Spread kataifi on a baking sheet and toast for 10-12 minutes, stirring occasionally until golden brown and crispy.
  • Temper the Chocolate: Melt dark or milk chocolate over a double boiler, maintaining proper temperature (dark chocolate 113-115°F/45-46°C, milk chocolate 113-122°F/45-50°C). Once melted, cool to 88-90°F (dark) or 86-89°F (milk).
  • Assemble the Bars: Coat a chocolate mold with the tempered chocolate and let it set. Fill with toasted kataifi and pistachio cream, then top with more tempered chocolate to seal.
  • Chill and Enjoy: Refrigerate the bars for 30 minutes or until fully set. Serve at room temperature for the best flavor.
