Easy Chicken Burrito Casserole

Ingredients
  

  • 2 cups cooked shredded chicken
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) whole kernel corn, drained
  • 1 cup sals a
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 6 large flour tortillas
  • 2 cups shredded Mexican blend cheese
  • 1/4 cup chopped fresh cilantro

Instructions
 

  • Preheat oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  • In a large bowl, combine shredded chicken, black beans, corn, salsa, chili powder, and cumin.
  • Place two tortillas in the bottom of the prepared dish, cutting to fit if necessary.
  • Spread half of the chicken mixture over the tortillas and sprinkle with 1/2 cup of cheese.
  • Repeat the layers: two more tortillas, the remaining chicken mixture, and 1/2 cup of cheese.
  • Top with the final two tortillas and the remaining 1 cup of cheese.
  • Bake for 30 minutes until the cheese is melted and bubbly.
  • Let stand for 5 minutes before slicing and garnish with cilantro.
