Ingredients
  

For the Soup Base

  • 1 pound ground beef Can substitute with ground turkey or plant-based meat.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced Use fresh garlic for best flavor.
  • 1 can (15 ounces) tomato sauce
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups beef broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper Adjust according to taste.
  • 8 ounces lasagna noodles, broken into pieces Use gluten-free noodles if needed.

For the Cheesy Goodness

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Garnish

  • to taste Fresh basil

Preparation

  • In a large pot, cook the ground beef, onion, and garlic over medium heat until the meat is no longer pink; drain any excess fat.
  • Stir in the tomato sauce, diced tomatoes, beef broth, Italian seasoning, salt, and pepper. Bring to a boil.
  • Add the broken lasagna noodles, reduce the heat, and let simmer for about 10-12 minutes or until the noodles are tender.
  • Stir in the ricotta cheese and mozzarella cheese until melted and combined.
  • Serve hot, garnished with fresh basil.

Notes

Best enjoyed warm, topped with fresh basil. Serve alongside a crisp green salad or warm garlic bread for a complete meal. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
