Easy Lemon Butter Scallops

Ingredients
  

For the scallops

  • 1 pound scallops Use fresh scallops for best flavor.
  • 4 tablespoons butter 2 tablespoons for cooking and 2 for the sauce.
  • 2 tablespoons olive oil For searing the scallops.
  • 2 cloves garlic, minced
  • 1 lemon Juice of 1 lemon Adjust to taste.
  • 1 lemon Zest of 1 lemon
  • Salt and pepper To taste.
  • Chopped parsley For garnish.

Preparation

  • Rinse the scallops and pat them dry with paper towels. Season with salt and pepper.

Cooking

  • In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat.
  • Add the scallops to the skillet in a single layer and cook for 2-3 minutes on each side until golden brown and opaque.
  • Remove the scallops from the skillet and set aside.
  • In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  • Add lemon juice and zest, and remaining butter, stirring until melted and combined.
  • Return the scallops to the skillet, gently coating them in the sauce.
  • Serve hot, garnished with chopped parsley.

Notes

For storage, keep leftovers in an airtight container in the fridge for 2-3 days. Reheat gently to avoid overcooking. Freezing is not recommended.
