Instructions
Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
In a large mixing bowl, toss the potato slices with olive oil, garlic powder, salt, and pepper until evenly coated.
Arrange the potato slices in a single layer on the prepared baking sheet.
Bake for 35 to 40 minutes, turning halfway through, until the potatoes are golden brown and tender.
Sprinkle the shredded cheddar cheese evenly over the potatoes.
Return to the oven for 5 minutes or until the cheese is melted and bubbling.
Remove from oven and garnish with chopped chives before serving.
