Easy Sliced Baked Potatoes with Cheese

Ingredients
  

  • 4 large Russet potatoes, scrubbed and sliced into 1/4-inch rounds
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1.5 cups shredded sharp cheddar cheese
  • 1 tablespoon fresh chives, chopped

Instructions
 

  • Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • In a large mixing bowl, toss the potato slices with olive oil, garlic powder, salt, and pepper until evenly coated.
  • Arrange the potato slices in a single layer on the prepared baking sheet.
  • Bake for 35 to 40 minutes, turning halfway through, until the potatoes are golden brown and tender.
  • Sprinkle the shredded cheddar cheese evenly over the potatoes.
  • Return to the oven for 5 minutes or until the cheese is melted and bubbling.
  • Remove from oven and garnish with chopped chives before serving.
