Preparation

  • Begin by toasting the English muffins until golden brown.
  • In a skillet, heat butter over medium heat.
  • Whisk the eggs, season with salt and pepper, and pour into the skillet.
  • Stir the eggs gently, cooking until they are fluffy and set.
  • Place the cooked eggs on the bottom half of the toasted muffin.
  • Add a slice of cheese on top of the eggs.
  • Cook the bacon or sausage in the skillet until crispy, and add to the muffin.
  • Top with the other half of the muffin and serve warm.

Notes

Serve with fresh fruit or hash browns. Store leftovers in an airtight container in the fridge for 2-3 days, or freeze them wrapped for longer storage.
