- 7 oz pack of fresh enoki mushrooms
- 2 tablespoons sesame oil
- 2 tablespoons low-sodium soy sauce or tamari for gluten-free
- 1 tablespoon Japanese sake
- 1 teaspoon sriracha or other hot sauce adjust to taste
- Chopped scallions for garnish optional
Trim the root ends of the enoki mushrooms and gently separate the clusters.
Heat the sesame oil in a small saucepan or skillet over medium heat.
Add the enoki mushrooms and cook for 2-3 minutes, stirring frequently.
Pour in the soy sauce, sake, and sriracha. Stir to coat the mushrooms evenly.
Cook for an additional 3-4 minutes, or until the mushrooms are tender and the sauce has slightly thickened.
Remove from heat, transfer to a serving plate, and garnish with chopped scallions if desired. Serve immediately with steamed rice or as a side dish.
