Ingredients
  

For the Dough

  • 1 cup butter, softened Make sure your butter is softened for easier mixing.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour Can be substituted for gluten-free flour blend.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips You can use dark or milk chocolate according to preference.

For the Filling

  • 1 cup caramel sauce For a chocolate twist, use chocolate caramel sauce.
  • 1 cup brewed espresso or strong coffee You can substitute with strong brewed coffee or omit it.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  • In a bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  • Beat in the eggs and vanilla until well combined.
  • In another bowl, whisk together the flour, baking soda, and salt. Gradually mix this into the creamed mixture.
  • Stir in the chocolate chips.

Assembling and Baking

  • Spread half of the cookie dough into the bottom of the prepared pan.
  • Drizzle the caramel sauce and brewed espresso over the dough, then top with the remaining cookie dough.
  • Bake for 25-30 minutes or until golden brown.
  • Allow to cool before cutting into bars and serving.

Notes

These bars can be served alone or enhanced with a scoop of vanilla ice cream on top. Drizzle with extra caramel or sprinkle with sea salt for a special touch.
