Ingredients
  

Salad Dressing

  • cup extra virgin olive oil For dressing preparation.
  • 3 tablespoons red wine vinegar For dressing preparation.
  • 2 cloves garlic, minced For dressing flavor.
  • 3 teaspoons Dijon mustard Can substitute with 1 teaspoon dry mustard.
  • ½ teaspoon kosher salt and pepper To taste for the dressing.

Salad Ingredients

  • cup grated Pecorino Romano cheese Can substitute with grated parmesan.
  • 1 head shredded iceberg lettuce Approximately 5-6 cups.
  • 1 head shredded romaine lettuce Approximately 4-5 cups.
  • 1 15-ounce can chickpeas, drained and rinsed Adds protein and texture.
  • ¼ lb Italian salami, thinly sliced Can substitute with turkey or ham.
  • 2 cups shredded mozzarella cheese For creaminess.

Instructions
 

Preparation

  • Add all salad dressing ingredients to a small bowl or jar. Whisk together or shake to combine.
  • In a large bowl, combine shredded iceberg, romaine lettuce, chickpeas, salami, and mozzarella cheese.
  • Pour prepared dressing over the salad and toss gently to coat all ingredients evenly.
  • Serve immediately and enjoy. Store leftovers in the fridge for 1-2 days, keeping the dressing separate for freshness.

Notes

Use fresh ingredients for the best flavor. Adjust the garlic amount to suit your taste. This salad is best enjoyed fresh but can stay good for a short time if stored properly.
