Equipment

  • Meat mallet or rolling pin for pounding chicken
  • Mixing bowl for marinade and topping
  • zip-lock bag or dish for marinating
  • Skillet or grill pan for cooking chicken
  • Meat thermometer to ensure doneness
  • Knife and cutting board

Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1/3 cup fresh lime juice
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • 2 ripe avocados, diced
  • 1 small red onion, finely diced
  • 1 jalapeño, seeded and minced
  • 2 tbsp fresh lime juice (for topping)
  • 2 tbsp cilantro, chopped
  • salt, to taste
  • lime wedges, for serving
  • extra cilantro, for garnish
  • hot sauce, optional

Instructions

  • Pound chicken breasts to even thickness for consistent cooking.
  • Whisk together lime juice, olive oil, garlic, cumin, chili powder, paprika, salt, black pepper, and cayenne (if using). Coat chicken in marinade and let rest at least 30 minutes, up to 4 hours.
  • Heat a skillet or grill pan over medium-high. Cook chicken 6–7 minutes per side until golden and internal temperature reaches 165°F.
  • Remove chicken and let rest 5 minutes to redistribute juices.
  • Mix diced avocados, red onion, jalapeño, lime juice, cilantro, and salt to prepare topping.
  • Top chicken with avocado mixture. Serve with lime wedges, extra cilantro, and hot sauce.

Notes

⭐ Pro Tips: Pound chicken breasts evenly for consistent cooking. Don’t marinate longer than 4 hours (lime juice can make chicken mushy). Use a meat thermometer and rest the chicken 5 minutes before slicing. Avocado topping should be seasoned generously—it transforms the dish.
