Ingredients
  

  • 1 cup cottage cheese full-fat or low-fat
  • 3 large eggs room temp
  • 2 tbsp maple syrup or honey optional
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 3 tbsp coconut flour
  • ½ tsp baking powder
  • Optional: 1 tsp cinnamon blueberries or banana slices, lemon zest

Instructions
 

  • Blend everything up: Add cottage cheese, eggs, sweetener, vanilla, and salt into a blender or food processor. Blend until smooth, about 30 seconds.
  • Add dry ingredients: Add coconut flour and baking powder to the blender. Pulse a few times to mix. Let the batter sit for 3-5 minutes to thicken.
  • Heat your pan: Heat a non-stick pan or griddle over medium heat and add a tiny bit of butter or coconut oil. The pan is ready when water droplets sizzle.
  • Cook the pancakes: Pour about ¼ cup batter per pancake. Cook for 2-3 minutes until bubbles form on top. Flip carefully and cook for another 1-2 minutes until golden.
  • Serve warm: Transfer pancakes to a plate and cover with a towel while cooking the remaining pancakes.

Notes

These pancakes are super versatile! You can add various toppings like fresh berries, sautéed apples, or sugar-free maple syrup. For a savory option, skip the sweetener and add chopped chives and parmesan.
