Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup pastry flour (optional, for tenderness)
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp sugar
  • 1 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk, cold

Instructions
 

  • Preheat oven to 425°F (220°C). Grease or line a baking sheet, or use a cast-iron skillet for a rustic look.
  • In a large bowl, whisk together flour, baking powder, baking soda, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in buttermilk until a shaggy dough forms. Do not overmix.
  • Turn dough onto a floured surface. Pat into a rectangle, fold into thirds, turn, and repeat twice more. Cut out biscuits with a round cutter and place on baking sheet.
  • Bake 12–15 minutes or until golden brown. Let cool slightly before serving.

Notes

For best results, use very cold butter and buttermilk. Don’t overmix the dough—this helps create light, flaky layers. Biscuits are best served warm, straight from the oven, but leftovers can be stored in an airtight container for 2 days.
