- 2 celery stalks diced

- 2 bay leaves
- 1 tsp dried thyme or 1 tbsp fresh
- Salt and pepper to taste

- 8 oz mushrooms sliced

- 3 tbsp flour or gluten-free alternative
- 1/2 cup heavy cream or coconut milk for dairy-free

Step 1: Prep the Chicken
Pat chicken thighs dry and season with salt and pepper.
Heat oil in a Dutch oven over medium-high heat.
Sear chicken (skin-side down if using skin-on) until golden brown on both sides. Remove and set aside.
